Long term squash storage

Winter squash in an excellent vegetable to store for long periods through the winter. As summer squash is best when picked before maturity and eaten fresh, the winter squash is perfect after the fruit has fully matured, and allowed to cure. Once the fruit of the winter squash has been harvested, store the fruits in a dry place with a temperature between fifty and fifty five degrees Fahrenheit. For long term storage, do not pile squash more than two fruits deep. If space allows, it is best to place squash so that they do not touch at all to minimize the spread of rot. Squash stored in this way will last for many months providing a flavorful delight in the middle of winter.

Though best used fresh, summer squash can be stored in the freezer for use in recipes. For best results at freezing summer squash, as soon as the squash is picked from the vine, wash, slice or grate it and measure it in increments of two to four cups per freezer bag. Frozen grated squash that has not been blanched is best when used within four months. Sliced squash will last up to eight months.
